A sparkling cocktail that layers Hiker's Hut Apple and Honey Gin with floral elderflower and fresh citrus, finished with thyme and grapefruit for a wintery, pine-like lift. Ingredients (2 serves): 30ml Hiker's Hut Apple and Honey Gin 30ml Elderflower cordial 20ml Fresh lemon juice ~150ml Prosecco (to top, ~75ml per glass) Ice Thyme sprig, lemon rind to garnish Expressed grapefruit peel Preparation Method: Add gin, elderflower cordial and lemon juice to a shaker with ice. Shake briefly to chill. Fine strain 40ml of the base into each chilled coupe. Top each glass with ~75ml chilled Prosecco. Garnish with a thyme sprig and a strip of lemon rind. Express a strip of grapefruit peel over the top and run it around the rim.
